Spring 2014


 
Perfect way to welcome spring -All butter cake with vanilla cream    

I think this spring is the most waited spring after the terrible winter we had with loads of snow. So I was thinking this spring is the perfect time to publish my blog with the butter cake post which everybody loves to eat.  

This is a very dense cake, not like your regular butter cake or pound cake. this will be good with vanilla cream, lemon cream, strawberry cream or almond cream.




Recipe
  • Original recipe makes 8 serving
  • Prep time 20 mins
  • Baking time  35 mins
  • Total time 1 hr 05 mins
 
Ingredients
3/4 cup white sugar
3/4 cup butter
2 eggs separated
2 tbsp sour cream
 3/4 cup all purpose flour
2 tsp baking powder
2 tbsp milk
2 tsp Vanilla extract  
 
Directions
1.   Preheat oven to 350 degrees F (180 degrees C). Line a 8” Backing pan with Parchment paper.
2.   Whisk together butter and sugar, add egg yolks one at a time and beat well after each addition. Add the sour cream and beat well.
3.   Whisk together flour and baking powder in a large bowl.
4.   In a separate bowl beat the egg whites until fluffy and stiff.
5.   Beat in flour mixture and milk alternately in three additions, beginning and ending with flour. Scrape down bowl edges with a rubber spatula and fold egg whites with the rubber spatula. Pure the batter to prepared pan. Bake for 30-35 minutes or until a toothpick tester comes out clean. Let cake cool in pan for a few minutes before turning out onto a wire rack. Let cool completely before frosting.
