Spice cake - Fall 2014


When the trees change color and the temperature goes down, all you want is nothing but comfort food. This cake is not only a perfect jump start for my favorite season of the year, this is a perfect comfort sweet as well. When you smell the warm spices around your house you know fall is here.

This cake is full of spices which come from around the world.









Recipe

  • Original recipe makes 8 serving
  • Prep time 20 mins
  • Baking time  40 mins
  • Total time 1 hr 10 mins

Ingredients
1 1/2 cup white sugar
1 cup butter
4 eggs  
1 ½ cup all purpose flour
2 ½ tsp baking powder
3 tbsp milk
2 tsp Vanilla extract  
1 tsp Spice Blend powder  (cinnamon, ginger, nutmeg, cardamom, cloves, star anis)

Ingredients for spice syrup
1 tsp Spice Blend powder  (cinnamon, ginger, nutmeg, cardamom, cloves, star anis)
½ cup sugar
1/2 cup water


Directions

1.   Preheat oven to 350 degrees F (180 degrees C). Line a 9” Backing pan with Parchment paper.

2.   Whisk together butter and sugar, add 1 egg at a time and beat well after each addition. .

3.   Whisk together flour, spice blend and baking powder in a large bowl.

4.   Beat in flour mixture and milk alternately in three additions, beginning and ending with flour. Add vanilla Scrape down bowl edges with a rubber spatula. Pure the batter to prepared pan. Bake for 35-40 minutes or until a toothpick tester comes out clean. Let cake cool in pan for a few minutes before turning out onto a wire rack.

5.   To make the syrup stir together water, sugar and spice blend in small saucepan and bring it to boil.

6.   Pour the syrup on warm cake and enjoy.
